Its pretty much a huge knot on a tree. When finished though it can be the best looking piece. The grain can look cloudy, swirly, or go in any which way. Burl pieces = big $$$

It's an ugly knot in a tree that happens when they grow witha fungus or some irritant. The big ugly bump of wood gets slided-open to reveal the most beautiful wood patterns. It's what Rolls Royce uses for trim back in the day.

Burl wood is sold by the pound out here in OR. Many people that live in the country have large pieces of burl slow drying in their woodsheds that they intend to sell. Burls aren't limited to any single species of tree, but species does affect value.

We do have a lot of black walnut in the valleys, but most of those are so old and often located around old government office buildings that they're a little hard to get.

Most of our burls come from maple and douglas fir. These are not coincidentally primary the trees we harvest commercially. Generally the tree cutters (fallers) cut off the burls and take them home kind of like a bonus.

Maple is beautiful.

Veneers are not all that expensive. Glue them onto a ply substrate and you have a great dash panel.

I made this a few years ago from ordinary maple, and it looks gorgeous in the flesh:

its not cheap but theres a company that makes a J1708 / 1939. to analog converter.. meaning it takes the cokmputer data in and outputs analog signals to be used with needle gauges.. so you could take an electronic dash and make a Pete-style dash without a bunch of extra sensors and wiring..
