Food bus

Looking to build out a bus for a food truck. I don't k is anything about busses just started my research today. I would love to hear opinions for a FE bus that is going to be mechanically sound. I'm a big fan of Cummins and also would possibly like to cut the back off into a flat bed. Is there anything structural i need to keep in mind when removing part of the back of the bus? Or is it something I can just do without many complications. ?

There are a couple of threads :

Ok.... Now I cannot find the second one. It is here somewhere..... The gent in that thread made a flatbed out of a full size dognose bus.

FE buses will give you the most usable floor space for a given bus length. RE buses will have a little less floor space in the same length bus and are easier to work on.
