Unhappy help on the way...how do I frame?

hello skoolie

I need your help. I'm not a framer I'm a farmer. this being said I don't know the first thing about keeping things plumb or square. I need help with the next phase of construction. Which seems like it should be the walls. I have a 35 ft 89 Thomas insulated with fomular f250 in all the wall panels, and some windows covered. the problem that I have is that the top of the windows is not the same width as the bottom. the channels that go up between the window seem to come in at least an inch. how do I get the wall leveled? \

I was going to run horizontal bracing all the way down the interior in 3 or 4 spots. one 6 inches to the floor one at the bottom of the windows, half way up the windows that I have covered ,and then at the top. I have a lot of wood to work with and a table saw. what would be a good choice for furring? should I cut the width of the horizontal struts to different sizes to make up for the gap? like 2 inches wide on the bottom of the window and an inch on the top strip above the windows? the fomular isn't flush with the channel iron in between the windows. it sticks out about a half inch. should I put washers, bushings, bolts? something to take up the gap.? please if anyone has time to walk me through this I would really appreciate it.
