I know there are quite a few options/products available for log home caulking...what do you prefer/use? Some have outrageous stretchability.

I can't remember off the top of my head, but I will look at a tube tonight and get you the name.

Anywho...updates!! I have gotten the driver side cabinets done, and almost finished my console. Just need to wrap up wiring, possibly tonight. Also, moved the bus off the yard and on to an easement on the backside of the property. Our landlord is ok with it here, which is incredible. Never dawned on me before that I could back it in and hang the butt over the yard and still fit on his property. It is about 1' from the property line, lol... Even got banana plugs for my speaker wires, which I am including a pic of because they look awesome.

Yeah, I built a log home before this, and had some stuff left over. When we sold the house, I scavenged all my leftovers and used it in the bus. My wife and I love the woodsy, cabin feel. My kids think of it as a part of the house we got to keep

Thanks! Update from last night. I would rather not discuss the fact that I am an idiot and the cutout for my xantrex controller is exactly an inch too big in both directions. I am either going to make a pine inset to fix the hole, or cut a new piece of sheet metal :/ Anywho, almost wrapped up that project, just waiting on 3 more on-off-on switches.

I think the "planned" pine trim will look really nice around the control panel

A wood trim would look good. Here is an after and before pic of what I did with my dashboard. I used 3/4 inch birch cabinet grade plywood.
