Looks like a good overall layout of the floorplan. You might consider switching the kitchen with the dining area so the kitchen plumbing is on the same side of the bus as the bathroom plumbing. That way also, you can more easily talk to your passengers when driving down the road if they are not directly behind you. Having plumbing on the driver's side is a good idea because that is where the external hookups are usually located at campgrounds/dump stations.

Oh, and if you think you will ever consider retrofitting a real RV toilet, you will want to locate your "composting toilet" somewhere that you could later mount a black water tank directly under it. And of course if you have a wheel located right under a drain, that may cause routing problems.

I know it's tempting to start building the interior first (most people do), but give serious thought now, before everything in place, to where your tanks/batteries/propane/etc will have to go. Their locations may end up dictating how the interior will be. How the frame rails and under-structure are on your bus is immutable, and everything else has to fit around them. Mind you, it will still be plenty hot back there, even with the insulation. Of course, not the case in the winter, it will be cold. I went sideways with mine. I might change it around yet. Also, I get 9mpg, I dont think we are going to get better than that.
