I havent seen a Pizza kitchen out of a school bus, but I think its in philly I saw a pizza kitchen out of a Gm New Look transit..

in my city we have a pizza kitchen out of an old ambulance..
seems like a bus would make a great food truck other than I do know in some of the events we have here in the city that food trucks are only allowed so much space each... they normally pack em together and the spaces are definitely shorter than the average school bus would be... they may even be controlled by city regulations... we have a place that builds foodies here in town and seems most all their trucks are the same size..

There are 2 or 3 converted food truck buses in Kissimmee FL serving Boricua cuisine. But man they look really dirty and haven't moved in ages.
IDK why but when they're no longer MOBILE, food trucks gross me out.

around here the health inspector can just hop in any food truck they want at any time... and do... so they are often cleaner than most regular kitchens because they can even be inspected after hours to make sure the cleaning is being done correctly...

I Love food truck food... but then im the OPPOSITE of healthy-organic style diet that many follow these days.. im definitely a product of the brown-bagger lid n straw generation
