My advise is.... make a plan. Make a plan for both systems AC and DC.
Buy a 120volt AC panel laqrge enough for about 12 full size breakers. Buy a surface mount panel with a cover that breakers can be operated. Several circuits shall connect to a single load as roof air conditioners. The other single feed items are the converter, room heaters, refrigerator, lites and lastly plug outlets. The 12volt DC circuits are made using any good manual reset circuit breakers. A circuit breaker box is good with about 12 circuits. These circuits are dependant ofr choise of devices and loads. Romex wire works great for either AC or DC. Don't forget 2 plans. Frank

I have used plastic ones in my bus.....just used the steel ones for the breakers. No problems yet.

I used the metal ones. However, I don't think mine touched the frame of the bus. It should no matter however, because the hot wire should never touch the box. Where are you planting? Man I wish I had my bus back when I was tree planting. Living in a tent long term sucks.

Pick up a portable gas heater, as it get's cold up there. I planted in northern sask, and outside Jasper ab and I have never been so cold a couple of those nights. You may find with a bus you may make all sorts of new friends who want a dry place to sleep . Take the bus even if it is a glorified tent, you will love it.

metal boxes will be fine, no live electrical parts will contact the boxes if you install approved devices properly.
enjoy the journey

Sevenus, if you dont have time or money to do the conversion yet, you can still run veg-oil as long as you thin it. Many people have had good luck with about 10% to 15%max of RUG (regular unleaded gasoline) and 5% to 15% kerosine mixed with 70% to 85% vegoil. Just make sure you filter the oil through a t-shirt first then if possible pump the mix through a good 10 micron filter as you pump it into storage containers. Most of the water will settle into the bottom of your oil containers before you begin to mix it. Do a little research on WVO blends on google and you will find out what others have done. I cannot speak from personal experience but plan to do that this summer. Good luck.

Top Gear, the awesomely awesome car show from the UK that we can only get here through the internet did a story on running a blend. They simply mixed 97 parts by volume veggie oil with 3 parts by volume white spirits. As best as I can tell white spirits is basically the British version of mineral spirits and it actually does work rather well to try just a little mineral spirits in there.
