George Meyers popped in my head as I read this. I can see no reason why his method wouldn't work. I don't agree with everything he says (like his wild musings on using stacked cabinet drawer slides to make a slide out based on the drawer slides rating... please don't do that... drawer slides are only rated X LBS for X Inches width) but I do think this would work. The metal expansion could be lessened by coating the roof with a heat reflecting coating (I prefer Snow Roof Elastometric Roof Coating). This is also a good method of adding insulation if you discover, after you've converted, that you need more insulation. Not that any of us who do that...
