It definitely would have been easier if hey'd been 8 inches higher. We made all the cabinets on the taller side, higher than standard so that they'd be more comfortable for a fall guy like myself. We've angled the backs of all the counters from the top to the bottom of the window to make the transition a bit better looking.

As far as deadlines, they're all coming up quickly. We had to have it at least campable (though the water and propane still aren't hooked up) by today (yikes) so there's been a real rush to get it to that stage. It needs to be all good to go in another three and a half weeks or so. Graduation really has made a big difference in the big recent push- we finally both have a little more time to commit to it. Let me tell you, it's a nightmare trying to balance owning your own business, full time architecture grad school, planning for a six month+ trip and building a bus. Now I only have to split my time two ways. Ha!
