Look for marks on the bolt / nut heads for the transmission bellhousing bolts, or signs that the bolts/nuts or engine block are cleaner than the transmission. Also, other bolts and nuts securing other hardware to the engine would show signs of removal and reinstallation.
You can also find the engine's serial # and check it against the chassis manufacturer's records of what engine serial # it came with. All bets are off if it was simply rebuilt, as the serial # would remain the same.
But I hear tales of people using ELC in applications that didn't call for it, as well as using non-ELC in applications that did, without issue. As long as the system is flushed completely, for some applications, it may not be a problem. I have heard of some going to non-ELC due to issues with the non-ELC though.
