My old 466 wouldn't go much higher than that until about 20 minutes of actual driving.

I have a 3126 and it doesn’t have plugs. Are you sure yours does? Can you plug in a scan tool for temp?

Just some thoughts on this

Where is Fern Beach? A warm climate, fill out your profile.

Is this a rear engine or front engine, need more details you didn't specify.

125f is just warm to the touch if you touch the rad hoses, should be up about 180-190f in my mind.

Does this engine even have a t'stat in it? Could have been removed for some reason. I think it has failed and is open all the time so not allowing warm up.
That gets you blue smoke from unburned fuel I would imagine.
While you are into it, find the coolant sensor and check it for cleanliness.
What is the antifreeze strength?
You pulled some heaters out...got pics of how they are connected now?
