As for me the real question is Miracle Whip or Mayo? As to
Fruit Fresh we have pretty well stopped using it since we
started using a ceramic knife to cut up our fruits. I wouldn't
have believed it if I hadn't seen it myself. I was always under
the impression that oxidation was what turned apples and
avocados dark but turns out it's reaction to metal. My wife
can cut up an avocado and leave it on the counter all day
and come back to a green avocado (no black or brown). As
an experiment I cut and sliced an apple with the ceramic knife
and set it out on a plate for three days and had dehydrated
apple with no color change using no fruit fresh.

After reading what everyone else is saying, I'd like to add one thing that may get you a step in the right direction.

Since fast food seems to be your food of choice you may want to start out by ordering the "healthy choices" that all fast food joints now serve.

From there you can add take alongs with maybe a few choices from fast food.

That will get you a step in the right direction and from there you can easily substitute a carry along without too much interruption in diet.

From there you will be able to pack your lunches without shocking your system.

I love the fact that nearly all of the fast food joints now offer salads.

But it REALLY pi$$es me off that they are such a huge rip-off! I mean, seven-bucks for .49 cents worth of green stuff and a little dressing!

They see them as "Profit Pumpers" just like the $1.59 soft drinks they scam you with.

Screw fast food joints.

All big grocery stores here in Canada have a deli. Every deli has far better salads and selection than any fast food place.

I get my morning coffee at the Mc donalds that is housed in a Walmart. Then I get everything else I need for lunch that day.

Unless its oil and vinegar, putting dressing on a salad usually makes if far less healthy than a burger.

This is my thought every time I hear the word salad.

Due to my food allergies, I eat salad with no dressing.

Waiting 5 min after putting the salad together allows the flavors to mingle.

All that yummy fresh cut tomato, onion, cucumber, ect.

Sometimes I top a nice salad with a can of fish crumbled up, juices and all. Lot's of great healthy flavor.

I'm very surprised at the number of people that have replied to this thread. It must be a topic that is on the mind of many. I thought I would get a few posts. This is great. Maybe we can start a thread with recipes of things that store well and are simple for travel. Obviously if you have a bus with a kitchen, you are way ahead of the game.

I make my dressing out of two avocados, raw coconut vinegar, namashoyu, nutritional yeast, and sesame seeds. The key for me is avocados. I could eat toxic waste so long as it had enough avocado with it.


and btw, cullengw, I carry the moose spirit more so than the horse (see pics of the grill of my bus) but as far as eating goes, american pharoah's got nothing on me

Just wish I had the proper recipe for a homemade strawberry vinaigrette I had a couple of years ago at a going away for a friend-of-a-friend thing. All I know is they whipped it up in about 30 seconds using fresh strawberries and and a couple of other goodies. Super light and amazing fresh taste. Have kicked myself ever since for not getting it/writing it down.

My experiments have only been "OK" at best.

And I am totally on board with starting a perma-thread for road recipes.

Here's an easy slaw recipe. Needs no refrigeration. I make this the night before:

Oil and Vinegar Slaw Recipe : Rachael Ray : Food Network

Pack any smoked meats from the deli

Pack your favorite cheeses

Pack good sandwich rolls

Pack some good pickles

None of the above needs refrigeration. Just cut a roll, and stuff it with the above.

If you wanted tomatoes, don't cut before making the sammy. Lettuce either.

for a snack, pack mixed nuts. Dehydrated fruit.

I like bread and cheese for a snack.

Sounds good, thanks, I'll have to try it. The home brew I enjoyed took a quick spin in a blender that reduced the strawberries and I don't see why this one couldn't.

There are some new generation, 12v compressors that work like gangbusters. Nothing like the toy solid state junk "coolers". Can't recall the details off the top of my head but an outfit called "Whynter" makes several different units including a true dual-zone refrigerator-freezer. Home Depot is even carrying them (special order).

Not cheap, but they have received excellent reviews from users.

There's this discount store in town (Bargain Hunt) and they frequently have a Wynter or two. They tend to get their stuff from returns & such from places like Target & I feel some of the shopping networks on TV. I have bought many electrical products through them with no problems.

The prices aren't that bad new & at this store.
