Yes, I will use 2 A/C units. Any recommendations on a particular brand or A/C type? What did you use?
In addition, I received a quote to spray foam the roof with R14 foam for $1k. Any thoughts?
Or should I go with the traditional pink board?

Do the spray foam.

Trying to bend rigid Styrofoam into the curve is a big pain, and you will never get as good of R value as the spray foam due to gaps, cuts, ect.

Get at least 3 quotes for the spray foam if you can. Or just call around for the price per Square Foot.

For rooftop ac, I'd go Dometic, but really they're all about the same.
Some have a lower profile and are a couple hundred extra if that's important.
Since you're here in FL, I'd recommend that you get the optional heat strip, they would be pretty decent for heat in the "winter".
