Happy Dad's Day

Hope you all are going to have fun.

It should be a nice day here with a high of 97°F.

We are driving back out to Bottomless Lakes SP for a little short hike on one of their trails. I've "made" a picnic lunch to take (and lots of water). Yesterday we stopped at Sam's Club, I bought a rotisserie chicken and red potato salad. Chicken was all cut up yesterday, placed in a one gallon ziplock freezer bag (holds up to the warm chicken really well), chilled down and tossed in the fridge. The 4 lb tub of potato salad got broke down into four 1 pound packages (sandwich size ziplocks placed inside a 1 gallon freezer ziplock) so that I could get it into the refrigerator. Saturday morning I had made up the coleslaw (my homemade dressing on a 2 lb pre-shredded coleslaw mixture) and it is marinading in a one gallon ziplock freezer bag. Coleslaw always tastes better if the flavours are allowed to co-mingle overnight. Now I have to go bake a pineapple upside down cake in the microwave.

It's amazing how much you can pack into a 4 cf refrigerator if you put a lot of the foods into ziplock baggies.

Mmmmm, I would like to get hold of some of that coleslaw. The (almost grown) kids 20/17 bought me a cowboy hat from Southerland's and bath towels from Marshal's for fathers day. I needed both, so a big 'right on' to the kids.

Lorna...thank you...dads got me 3-1/2hrs to work on bus...6 to 930 am...the I made breakfast...and I got a kick azz mexican cook book...and several bottles of wine...good day
