It's not all that common for people to completely delete roof hatches.
What is common is that they get repurposed for AC or fans. The standard hole opening for RV units is 14" square, so the hatch holes are too big.
The normal solution is to skin the hole with steel. It's not usually welded in place but sealed with an elastomeric sealant and either screws or rivets, then a new hole is cut.
None of this is necessary. You are free to keep your hatches. Be aware though, that the roof hatches are a very common entry-point for thieves.
