On my 2001 f250 standard cab 8 foot bed 7.3 auto. The best I have gotten for mpg was 21. This was feathering it up to speed and not going over 55 on the interstate with no trailer and just bags and a wheelchair in back. Most of the time I am around 15 to 17 mpg in the city but then again I don't fill it up more than once a month so I don't drive it much. 56,000 miles on it since september 2001. When I hook up the plow and drive around with it mpg drops to around 10. My numbers are not based on some widget in the truck. Mine numbers are based on actual gallons pumped in the tank based on miles driven.
Currently I do need to replace my rear pads and rotors. Everything else is good. my plowing is only the driveway and some light clean up work after plows go through my workplace. I say this cause you can find a truck where the auto transmission can be perfectly fine and never abused where it will last many years to come.
If I was to buy a used truck right now I'd probably go with a Chevy gas engine of the years you said. Although the ford v10 is a good powerful engine just a little overkill for the average person with no towing.
