I am using seats that came from a cross country bus (Trailways maybe?). I bought some from both sides to build a booth. As for dimensions I plan to take my measuring tape with me to some restaurants with comfortable seating and measure their booth seating and the table size.
I will use table size from the restaurant seating as the starting point. My booth needs to seat four "healthy" sized adults. An effective sized table is important, as It needs to support all the plates and such for four. In my case the seats I found don't have mounts that match up to the Crown, but will be modified to fit. The shotgun seat will be shortened and one of its seats replaced with a custom "table" to support a cup-holder, USB port for charging phones, tablets, etc, and storage for reading material, etc. I want the wife to be comfortable in travel.
There will will also be a bookcase in the "new Crown" for any manuals needed for the bus, appliances, electronics, and all unique documentation for the bus.
My experience with factory upholstery is that my GMC truck has perfect seats at 112k miles.
The F250 I sold last year still had good original seats with over 400k miles. My other F250s have rough upholstery. One I am getting the driver's seat re-upholstered the other OK enough. Of the three Nissans we have had so far (still have two of them) is not as good. The HMMWV driver's set lasted less than 50k miles. Of course it is the least comfortable vehicle I own but I can always get out in the winter or spring and it always starts when I need it.
