It sounds like you already have too much to do and too little time, but if you find a way to secure a tarp over the jacuzzi while driving it will help contain some of the water....

For cutting straight lines in sheet metal, I like to use a circular saw (the type meant for carpenters) with an abrasive blade on it. I find this method makes much nicer lines than torches or a saws...
