You say this is a "kitchen " bus...
I take it you won't be serving out of it. In full size skoolies, the floors are a tad high. If you make the entry door your serving counter, then you had better have someone who either does nothing except take/serve orders or has extremely hefty leg muscles! And be legal for your state. Hope you aren't in FL or GA...

Might opt for a ramp instead. You are looking at potential lawsuits for injury with steps and to a slightly lesser degree with a ramp. Might make your foodvendor insurance go up (if required in your state). The floor of our cart is 16" from ground which makes the order/serving window 49-50 " from ground. Awkward for kids and wheelchair bound customers (we have quite a few that are). Our adult customers range in age from 18 to upper 80's. I think the floor of our bus would simply be way too high. Perhaps someone can post how high their floors are. My bus is at my daughters house and I have to (hopefully) pick Hubby up from the Hospital in ALBQ. So I will not be going over to the bus today or most likely this week (and we have an event this weekend ).

Oh heavens, I just realized you're in FL! FIRST, contact your county health inspector. Before you buy a bus. Before you buy any equipment. Find out what you need, what you can sell and where you can set up. FL is a PITA to operate in. Go to http://www.roadfood.com and go to the forums (scroll down to Restaurant Professionals & Professional Hot Dog Vendors... food vendors post in both forums). There are some folks there that are in FL. And a couple are in either Broward County or Palm Beach County (or both).

BTW, my 40 ft Blue Bird FE All American has 35 ft behind the drivers seat.

Just a thought, what if you added a deck on the back bumper with a serving counter. Then you could adjust height and set it up however you wanted.
