Vapor Barrier questions.


I am currently in the process of converting a 40’ 14 window Thomas Saf-t-liner. I am trying to determine the best vapor barrier for my ceiling. I am deciding between Rockwool, EPS, or spray foam. I know with spray foam you don't need a vapor barrier. I feel that if I go with ESP or Rockwool I will need some sort of barrier. I really don't want to spend all this money on a conversion only to end up with rust and mold in my walls and ceiling. Anyone have suggestion.
