What would you recommend if we have 100 gallons of fresh water? TIA.

Of course it depends on how you use water, but this will give you some idea.

100 gal fresh tank, w/composting toilet. We've got around 65 gal for grey water and, if we could do it again, we'd go with more like 80 gal. There's always a little water in the fresh tank when the grey is full.
