The Big Lebuski project

Hi, just bought and still in the early stages of my skoolie. I have a 2000 thomas saf t liner mvp er (it's either a 35ft or 38 ft 78 passneger) the seats are removed. Working on getting it running better. Need a new starter solenoid so that I don't have to basically hotwire it to start by bypassing the solenoid. Reconnect some wires last owner I think got a little cut happy but thankfully I know how to.splice wires and all. Maybe install some extra fog lights and turn signals in the light holes on top in the front and some extra turn signals and either brake lights or reverse lights in the light holes up top in rear where there was the stopped for kids lights. Install a tow hitch for towing our 2014 Ford escape titanium. Fix the speedometer and odometer light comes on but needle doesn't move neither do numbers thankfully it has a hubometer from the school that owned it for tracking mileage. And as usual change some burnt out light bulbs lol. And basically from there remodel the inside to be off grid with solar polar water and etc for a family of 5. I'm open to any tips, tricks, life hacks, recommendations, and how to advice.
