Extra Ceiling Insulation

I'd like to have a couple inches of extra space between the roof and ceiling of my skoolie in order to put extra insulation there. I'm only 5'2", so I'm not worried about that. I just have no construction experience and am wondering about the best way to do it.

My first thought was to screw furring strips vertically into the metal beams so that the strips extend a couple inches below the beams. Does this seem reasonable and structurally sound? Are there other suggestions?
