Insurance for my bus

I'm working hard to get our skoolie finish for the summer. My wife and I are teachers and our plan is to travel around the country for most of July and August months. Everything is aligning correctly, but the registration and insurance of the bus.
We life in New Jersey and our GARDEN State is a pain for anything like our project. To register the bus, the conversion must be finished and I'm worried that I wouldn't complete the requirements on time and get it registered for the summer.
Second and an even the worst issue is the insurance. So far, all the companies that I have called refuse to register a conversion.
I found out about Vermont and I'm thinking about getting it register over there, but what I can do with the insurance? If my driver license and permanent address is in New Jersey
Please if you have gone this route or know how to do it, let me know. Especially the ones who live out of the state, how do you ensure yours? Which company and address do you had used and how much it costs?

These guys are relatively new to the scene, but they have a good track record so far.

Personally, I got insured through AAA. They've got me on basic liability for now at around $130 a year. Granted, others have not had the same experience as I did. But the agent I worked with didn't seem to have pulled any special strings for me or anything.

He and I came to the conclusion that insuring it as a pleasure vehicle was the best route to take.
