Skoolie for Retail Truck

Anyone here have experience converting a school bus for a retail boutique truck? (Think taco truck without the tacos) We have a brick and mortar candle store where people come and blend their own fragrance into a candle. We are wanting to take this experience into the wild as it were. To farmers markets, street fairs, neighborhood parties. The only REAL need is electricity to power our melter (think overgrown crock pot), a heat gun, and some lights. There would be installed shelving and removable folding tables & chairs that we would set up outside. We have found a gutted short bus for our project. Do we really need to go down to frame and insulate? We would only use it in nice weather. Thoughts guys? Thanks in advance

I would not gut it. They do normally have insulation in them anyway.
