Winter condensation

Hi yall. Im thinking about converting a 40 bus but I cant get over the fact that they just dont breathe. I live in a super dry climate, and Im thinking about eliminating all the windows, and adding some double pane rv windows. Id also do closed cell foam insulation, and a wood stove for heat. Id just hate to throw a bunch of money into this and end up with mold or rot... Anyone have experience wintering in a bus, and have any insight on this? Thanks!
