Winter condensation

Hi y’all. I’m thinking about converting a 40’ bus but I can’t get over the fact that they just don’t breathe. I live in a super dry climate, and I’m thinking about eliminating all the windows, and adding some double pane rv windows. I’d also do closed cell foam insulation, and a wood stove for heat. I’d just hate to throw a bunch of money into this and end up with mold or rot... Anyone have experience wintering in a bus, and have any insight on this? Thanks!
