Also, we live in Oregon, a ONE PARTY state for phone conversations being recorded. We record ALL phone conversations that involve legal issues including conversations with agents of insurance companies that might later try to deny a claim. When it's not a phone conversation it is in writing. When we specifically ask them about coverage for x, y and z, they will later have to cover those items if they say they will on audio or in writing.
Just something we do, for all aspects of legal or potential legal issues.
Credit cards
Banks
Insurance with anything other than standard car coverage.... for example our RV super duper tow coverage.

If you have a policy or contract, doesn't matter what they say to you if it isn't included in the written policy it isn't going to count. Any verbal changes have to be in writing and signed by both parties. You mean you don't have the recording that was made later stating we don't cover said item?

The written and signed contract is important but when that contract does not specifically exclude a certain item or category of items which the other party then tries to exclude after a claim is submitted, the verbal statements of their employees and agents are persuasive.
And when there isn't a signed contract, the recording is very important.
On the other hand, I've had courts completely ignore the ACTUAL LAW requiring a signed contract and found in favor of a corporate plaintiff claiming to have such a contract. It's rather disgusting but it happens and it happens in multiple industries....banking and real estate being the most often to abuse the courts and those they allege to hold contracts with.

fwiw, to future internet researchers, I called Progressive Commercial (kinda separate from Progressive) and they were awesome. The first guy on the line, I told him I just needed a policy to drive it home etc, have all the seats pulled out, and he said I would be good for coverage until renovations started on it, and I was "out the door" with a policy in Oregon for 215$ / 6 months. He was super kind, and even mentioned having a family friend who had converted a Thompson Bluebird before.
