Pretty sure that '80 is too early for the 6.2L Chevy/Detroit engines, which started in '83, I think.
As far as batteries go, it should take the largest truck battery you can find, other than the 18-wheeler tractor batteries. I think they're called "Group 24" size batteries; you'll probably need two of them, although if you're using the Big-Block gasser motors, you should be able to start with just one.
As far as the alternator goes, you can probably use an alternator off a 1980 C60, although if you locate your VIN plate--usually on the driver's side above or below the window, or in that general area--it should also disclose the GMC chassis model. This is because GM will sell Bluebird or whoever either a frame with a motor and steering wheel, or a van-cutaway specifically for the purpose of adding a bus chassis on top of it.
If you take the GM chassis model into an auto parts store like Oreilly's or NAPA, they should be able to locate an exact-replacement for the stock alternator on your bus. And that goes for pretty much any replacement part that is attached and necessary to the "vehicle" part of the bus; so brakes, suspension, exhaust, filters, fluids, et cetera.
So my particular bus is based on the GM P30 platform, which is essentially a medium-duty version of their 1-ton C/K 30 platform, but the parts are still available at auto parts stores when I walk in, because I know what to tell them when they ask "what vehicle?"
