Jiffy Recipe eBook

Not everyone will buy a "Jiffy" mix. They usually have never had them and think the name is funny and cheap. I like them because I can make a "small batch" mix cake great for 2 to 4 servings. No left overs. Important when you really don't have room to store left overs or don't want the stuff hanging around. They are the perfect cake mixes to "doctor" up and make just a little more special.

Here is an eBook that you can peruse online OR you can order the hard copy for free. I've lost my old copy so I needed to order a new one. Found the online version in the process. So I can use it while waiting for my hard copy to show up (I make notes in the margins).

I have a few boxes in the cupboard right now, I use them for pancakes mostly...

I'll have to check out the book, I'm a foodie type...

My mom used to use the cornbread mix all the time. It was the only cornbread that would turn out right for her. Not only have I used the baking mix (so much cheaper than Bisquick and can use the same recipes), but I have used the yellow and chocolate cake mixes as well. They made single layer "snack" cakes. I used to have a couple boxes of cake mix in my camping rolling stock (supplies I kept in the popup so I would only have to pack a very few items.... we could be packed, load the kids, dog & cat in the car and out of the driveway in less than 15 minutes). I had an undercounter microwave convection oven in the popup that we used to cook with. I baked a lot of Jiffy cakes in the popup.

I picked up a couple boxes of the Jiffy yellow cake mix (only flavour Wal-Mart had) plus cheap canned frosting (they did have the vanilla and the chocolate frosting mixes but I don't want to get the cordless drill out just to mix up some frosting). I'm going to try microwaving the cake according to their directions (plus high altitude adjustment). So David gets cake tomorrow.

It's a "multi purpose" appliance!

They have some really nifty small ones at Home Depot that would make great mixers and take up less room than a hand held mixer. I'm not allowed to buy any more toys.
