Starting on my electrical and I have questions

We have just gutted our 2004 Blue Bird Micro Bird exposing almost all of its wires.

So, a few questions, like most we, we have never done this before!

My biggest question would be what do I do with the existing wiring and boxes they feed into? I've read everywhere "cut one at a time and start the bus in between wires" and I get that, but what do I do with the panel they're all fed into? If I end up with ten wires I want to keep from the existing bus wiring, do I feed them into a new panel? Or just leave that mess alone?

Second, the kid minder, or whatever it is called.
I'm having issues with it because it sets off the chassis alarm whenever the driver door is opened. Is there a way to disconnect this?


And lastly, the box that triggers the beeping from the emergency door exit in the rear. I want to keep the door and it's handle intact, but I want to remove the little box that it locks into.

cut off all this crap above driver.u most likely will get no start but i bypassed that with button push and 2 wires to starter and battery.other than that everything works fine and all those shitty safety things are gone.
Forgot to mention about trace and save all taillights. my van right now has pseudo taillights none of them work just glued back to spots
