In my electrical system design writings, I always promote 2 inverters...a small one for things which you might want to run all the time (like chargers and clocks and the water heater) and a larger one (with a remote on/off switch panel) for higher draw devices and appliances...like the induction cooktop, coffee maker, tools. I like your plan and will follow along as you implement it.
True, these run on 110! I had a dinky 500 watt inverter specifically for the Camplux in my original design, and ended up pulling it out because I have plenty of battery capacity and will keep the main inverter running 24/7.

I still haven't connected the dedicated fridge inverter for the same reason.

I don't know (I'll look it up)what the idle current (standby) is on my main inverters but I would imagine it's noticeable. Also I'm not sure yet of my usage as far as battery capacity. I believe the little inverter I bought is 300w. My fridge is a 12v Norcold and I'm researching a small 12v chest freezer. My weakness is my gaming computer ; -)
