it's likely you're going to fry something - something is getting very hot - if it isn't melting, I'd be surprised

It's the surge. Air conditioners have huge inrush demand. Unfortunately I'd urge you to find something more like a 5kw unit, keep in mind most combustion engines run most efficiently at 80% load, and I've been told to size a generator 5x your average demand. A 5kw unit will run my whole house, but barely. It can run a large window unit fine, water heater alone, or everything else.

If you can, plug it into a regular house circuit and see if the prob goes away.

Would a soft start (capacitor) not help with this problem?

OK so how hot is it in the bus? you say it runs for like 4 minutes before kicking the breaker... the surge current is instant.. it would trip the breaker the minute the unit came on .. but very hot interior and a portable unit that already has undersize condensor... it runs the head pressure off the scale.. which makes the compressor pull huge amounts of current.. sometimes enough to trip the internal thermal on the compressor.. other times just so much current that it kills off the breaker in the generator..
if you plug a 1500 watt space heater into your generator without the extension cord does it do the same thing?is this 2000 watt generator, 2000 watts off of one 110 volt leg? or is it expected to see a total of 2000 watts using a 220 volt load which pulls off of 2 legs.. ?

You're way more likely to get Instagram hits if you paste the link, instead of sending folx on an Easter Egg hunt!
