Thermostat for old magic chef stove/oven

I thought I’d post here first rather than make a new account on an appliance specific forum. Sooo, hopefully we have some appliance gurus in the community.

I have a seemingly very old magic chef stove oven combo. It is model number 165-2, I found a pdf of the manual here: http://nebula.wsimg.com/b5861d51faaeb823dc478897081a0b44?AccessKeyId=5F08A 6A047671B630469&disposition=0&alloworigin=1

It is missing the oven thermostat, thermostat dial and thermostat bezel. I can’t find parts for this model anymore. But I can find thermostats and dials for newer magic chef/whirlpool ovens. Like this https://partsdr.com/part/7515p046-60-gas-oven-thermostat

My question is, how universal are these parts? And, are there any safety concerns with such an old stove? Newer models are pricy and I like the vintage, puke green look of this oven, but it will take some elbow grease and a fair bit of time to bring it up to snuff (rust removal and some new enamel paint) i basically need to do everything this guy did, plus replace the thermostat: https://youtu.be/lO2OkZCvodY
