Ambitious no experience bus

I bought a 1996 turbo diesel e350 with a fiberglass shell. I am now working to clear all the inner fiberglass insulation and unnecessary wires (I took out AC, heater and wheelchair lift.) It will be a simple rebuild into a juice bar with battery operated lights as well as, hopefully, some sky lights. I would like solar power to run all the equipment and a generator just in case.
Right now, it seems like the next step is filtering through and discarding unused wires as I'm close to ready to start framing it.
It's been a wild ride and I'm doing this alone. I've bartended and served tables for work and only have experience from putting around with my tools on my days off. Please help me through this conversion!
