Ideally you'll want to charge your battery bank while you're driving, from you high output alternator. If you're not driving frequently you'll need another way to charge the battery bank. So solar, shore power or a stationary bicycle hooked up to a generator.
For charging your battery bank a lot of people are using a charge wizard. Not familiar with it, pretty sure it runs off of 110v.
If you're on shore power you'll have to decide if you're going to have two electrical systems, 12v and 110v, or power just your 12v system with the shore power. Lighting is probably just short of adequate on 12v.
A Converter (I think) is to change 110 to 12v to charge your battery bank, and the inverter that changes 12v to 110, but I get them backwards sometimes.
You'll find lots of tanks for sale on Craigslist, including new ones. There might be tanks listed in the phone book but I haven't found them.

I am going to have some 110 stuff so I want to be able to plugin and run the 110 stuff as well as have something to keep a small fridge running while not on shore power.

In actuality my fridge defrosts every time I drive to town to get groceries because I unplug from shore power. In a way it's convenient if you have a fridge that seems to gather frost like mine. However there would be a lot of bad smells coming from there in a couple days if I didn't have a way to get power. I do have a small generator that will run the fridge, lights and TV. With an inverter I could run the fridge off engine power while driving. It would still be nice to have the battery bank when boondocking so I don't wake up to a defrosted fridge the first thing in the morning.
I drive around where there is brush and limbs so I don't think solar panels on the roof are in order for me. I'll take the battery bank worth a few days of fridge operation. My HO alternator should charge my system also if needed while boondocking. A little generator backup and that's about it.
I don't really use any of the 12 volt system in my "van." I do not have house batteries yet and I don't want start using the vehicle's starting battery for powering things. It's either hand powered items or it's 110 volt. It would be nice to have some 12 volt led lighting but I'm not there yet.
That's why none of us can seem to copy each others electrical plans. Each of us uses our buses so differently and we live in different climates. Everyone has good reasons for why they like things the way they are in their own bus. None of us do exactly the same things with our buses. Mine is still a work in progress.

Water tanks are reasonable from a surplus seller on ebay.
As far as charging goes, when your plugged in use this,
Robot Check,
or something similar.
Charging from your alternator is good if you have one that is high output, some people don't like to idle while sitting, but while driving it's a very good option.

it is a reliable brand...and
it is "pure sine wave"...
they typically range from a hundred to $400 bucks depending on brand & bells & whistles. A few go higher.

inverter/ chargers are good for there charging power, mine will put up to 100 amps into the batteries when pluged into a 30 amp shore power. its a modified and ive never had a problem. 2000 watts will do about everything you need
