Downsizing to upgrade

Hi from Montana. I'm currently looking (online) at a 36' '93 international with a DT 360 and the AT545 with 200k miles that is nearby. My plan would be to live in it full-time, including during the conversion. If I'm able to get into it, by the end of August, that gives me several months to make it winter-proof before it really gets cold.
I'm planning a wood stove, gas range, sink, under-bus water storage (will have to be heated and well insulated), shower stall, and toilet. Initially I'll sleep in a hammock. Once I'm done with the basics, I'll move on to add some creature comforts like an A/C unit and a 2in1 washer/dryer. My biggest concerns, right now, are the electrical system and the mounting of tanks for fresh/black water. As well as a place to park it.

Some people in harsher climates put the fresh water under the bed. Insulate the floor and make sure it stays above freezing under there and you have oneess tank to heat.
