Hello from SoCal!

I am still trying to select a bus, but am super excited to get started on a conversion! I'm looking to convert some sort of short bus into a camper / travel bus. Right now I'm looking at E350 and E450s but am pretty unsure on what would be best.

Welcome! And good luck in finding THE bus that's right for you. Definitely cast a wide net!
Given CA's progressive stance on emissions control, you'd do well looking to the north, and several states over, eastward, before you buy.
Plenty of threads on the forum covering which states and auctions to suss out.
Itemize your planned utilization. If you're staying in the flatlands you'll have more options than if you expect to be mountain climbing! Again, plenty enough threads here on engine/tranny/body style. Time to start studying...

Welcome to the asylum!

Thanks for the warm welcome guys! And great issues to think about HazMatt! To be honest at this point I don't event know what I don't know, but the more I research the closer I get to figuring it out.
