Sorry you gotta read this stuff here about your mum. I know she wears here emotions on the end of her shirt sleeves but so be it. She seems well meaning and like solid people. She had some good, cheap idea's about conversion. I PM'd her not long ago on some door instructions and she got back to me pronto; so she's around. She pointed me at a nice site she has up about the bus. I'm all about cheap so I liked her info.
We all got idea's about how these bus projects should go. We all have different uses for our buses. Mine is supposed to save me money. It is obvious looking at some of these builds that cost is not a huge concern. Hey that's good if you've got the money to do it. Just not my style is all.

Didn't know Smitty so can't say. Did know Lorna and---well--we all have our opinions I guess. Perhaps the latest change will encourage others to pick up the seeming slack and offer up their knowledge and experience as the forum continues. In my opinion that would be a good thing.

Nah, it doesn't taste the same. I make bread, waffles, pancakes, and corn muffins with rice flour, potato starch, millet, and corn meal. It's different. Bread is denser, brown rice noodles pretty much taste the same (I fed a FOUR-YEAR OLD homemade gluten-free mac-n-cheese and he couldn't tell the difference. Now THAT'S a Taste Test WIN!), and sweet quick breads cook up differently. It does have a nasty habit of drying out in the fridge,so I typically only make as much as I'm going to eat in one sitting.

Not having a microwave kinda helps in that aspect, cold noodles of any kind is icky. *Gaaaaags*

I too am a Celiac. By the age of 15 if I didn't remove Wheat, Barley, Rye, and Oats from my diet, I was headed for hospitalization. It took 4 years to get my strength and stamina back to almost normal levels. 10 years to completely recover to full health.

I also can't consume refined sugar from sugar beets. It shuts down my pancreas and puts me back on insulin.

All in all my food allergy's are a blessing. They force me to eat more raw, unprocessed, foods. I also had to learn a great deal about nutrition to get my mental and physical strength back. The life I lead and enjoy depends on it.

Been glutenfree for almost 2 years now, on the suggestion of a one-time celiac customer. It messes with my brain waves (the Zombie-fication process is 86% complet---Duuuuuuuuuuuuuurp) and gut activity. Rashes and welts when I've been contaminated. Haven't gotten tested for it because it's so bloody expensive and I'd have to be back on the wheat for 3 months in order not to get a false negative. I didn't realize just how much OH GAWD PAIN I was in until I started healing up. I don't pop painkillers like skittles anymore (...okay, certain times of the month I can go through a whole bottle in under a week).

Getting Corn syrup and High Fructose out of my system now.
