Minimum size for a Bankette

I’m about to do the interior carpentry. I got 160 sq ft of 1x6 T&G “blue stain pine” which is beetle wood that’s weird and interesting. Hmm we’ll see...

My question is, what’s the minimum size for a bankette? I have 66 inches. Is that enough for two seats that face each other and a table between?

Can you build thin backs instead of the normal thick padded variety? You'd lose at least a foot just from those.
