Yes, definitely. If you're already going the spray foam route elsewhere, doing your ceiling (after removing the original metal ceiling panels and the old insulation) provides excellent insulation and does a good job against condensation problems.
Generally, you want to distribute your insulation evenly around the surfaces of your living area. 1" of XPS foam all around will be a lot more effective than 2" on the floor and one wall and no insulation on the ceiling or the other wall (just an example of the principal - obviously nobody would do that particular arrangement).
The fiberglass insulation in your ceiling is probably/possibly moldy, and its limited effectiveness is compromised further by the steel ceiling.
Removing the original ceiling panels and insulation also lets you identify any places where the roof or the escape hatches are leaking. Also a good reason to remove the walls and insulation as well, since this will expose the windows that are almost certainly leaking.
