The coolant was a spewing out of the radiator cap that is on top of the overflow

If it's hydrolic it will have 2 hoses to the fan motor. Follow them to the reservoir. It is likely an oil system (10w 30 on mine) and it should hold a good amount of oil (upwards of 3 gallons)
Start with the easiest thing, oil level in the fan (and usually power steering) hydrolic system.

The power steering reservoir is the same best that cools our runs the fan motor it had been leaking on the top out of the vent but it days its almost full
She is a97 blubird with a 5.9 cummins all mechanical motor

Made it to a friends place

She was only 3 quarts water and it was full the fan turned and the water pump seemed to be pumping I drove.her 55 miles per hour about 25 miles and the gauge did its usual up and down thing but never got any where near the red. I still have 2100 miles to go and I'm afraid to get in the middle of bum **** Wyoming our idaho and have it happen again I'm going to replace the radiator cap but what other kind of tests or trouble shooting can I do?

If it is a hydrolic fan, it may turn, but there is a type of diverter valve that will preference your steering before your fan. If the pressure drops low for some reason it won't fully engage the fan... That being said I have very little knowledge of testing this system.
