Check out RossLukeman.com on YouTube. I took his master class on electrical and it's awesome. He's actually based in Houston, but works worldwide. His primary focus is electrical, but might also be able to refer out to someone local for plumbing. Please tell him Kris sent you if you go (full disclosure, I do get a little kick-back if you take the class).

That aside, I knew a little bit about 12V from cars and stage rally, but knew nothing about RV/Bus/120V before taking the class. I just finished my system and it's phaaantabulous. I love it. There's also a monthly call section where you can ask unlimited questions and chat with people form all over the world. It really is a unique situation.
