Hi is there a way to lock the emergency roof hatch so it is impossible to open it from the outside but it still has functionality from the inside? I was thinking that removing that know would be an option but I'm worried it wont open from the inside then? Right now someone can just get on the roof and open the hatch from the outside if they knew about it

The knob would be my first try - it's usually a secondary operator on the primary exit mechanism and I can't see why it would cease to function. Try it and see.

The whole hatch would be my real answer. Do you need to keep it? It's really designed for roll-over egress. If the bus is upright it's pretty hard to get out from the inside without the seats in place, and once you're on the roof, it's not exactly easy to get off. Better IMO to put an emergency egress window in the bus (or keep the two that were there stock.)

I already converted the bus, so getting rid of the hatch would be a nightmare right now. I also use the hatch to place starlink on my roof.
The knob seems like a fair option but i'm afraid that i won't be able to fix the functionality if i delete it and it turns out it broke the mechanism :)

I can't think of anything that would prevent the hatch from opening from the inside if you removed that knob. My hatch literally just opens from a strong push, no knobs or dials required.

On the same note though, I don't think removing that knob would also eliminate access from the outside either, if somebody just tugs on it strong enough, it'll pop right open.

I'd get rid of the hatch they leak. That said- my bus still has one I haven't deleted.
I made it "impossible" to open the hatch from outside due to the hurricanes and storms. I use a couple ratchet straps with the hooks on the inside hatch "handles" and down to some holes left in the seat rail. Don't crank down on them too hard it just needs to be snug.
3+ hurricanes and my hatch is still there.
