Kitchen Countertops

What kind of countertop did you choose to use in your kitchen area? Pro's versus Con's?? Trying to decide what to use and if there are creative alternatives that work just as well or better.

I was just going to use plywood like I did on my dining table (see pics in my build thread, link is in my signature) but then I came across some prefabricated laminate countertops at the home depot that were on clearance and were a steal. You can see how they ended up in my build thread.

on my previous bus, I used counter top that can be purchased from any big box retail store...Lowe's, Home Depot, etc. Just cut it with a circular saw to the length I needed. I think I bought the finished Formica ends there as well.
Pros; quick and cheap, back splash already built in.
cons: you won't be able to be creative, your counter top will be a rectangle.

Pros: Looks, feels, smells amazing. Goes with our look.

Cons: Maintenance is comparatively high, cost is comparatively mid-high, weight is middle of the road.

I stayed in an airbnb a couple of years ago with butcherblock countertops, and it had "DO NOT GET COUNTER WET" signs everywhere. Are they that much of a pain?

I got a couple of free stainless steel carts off of Craigslist and I'm going to see if I can repurpose them into countertops. I just don't think you can beat stainless for durability and ease of cleaning.

We've not got to that part of our build. I would imagine that whatever we can find that is not too expensive and is still within our aesthetics/design parameters will win the day in the end.
