I want to use the alternator to charge the house battery bank when driving and power the inverter for minisplits and other ac loads. So I have a solenoid to allow the house dc system to connect to the alternator using a low voltage cutoff controller board. What should the low voltage cutoff be set at to ensure the coach batteries are fully charged before delivering energy to the house side?

Inverter is 2800W,
Alternator is 200A

House bank size- 12v @ 1000AH
Coach is 12v 2x group 31

Before getting to that voltage cutoff question...

What kind of house batteries do you have? Are they lead-acid or lithium? I ask, because if they're lithium you'll want to use a DC>DC charger instead of a direct solenoid connection.
