Roof Raise: Why take out Windows, Panels etc.?

I understand that I need to take away the material where I cut (I'm planning to cut below the windows) but why remove everything inside? (ceiling and side panels, windows, etc.?

Is there a downside to this if I don't need to gut it for my conversion purposes? (it will be primarily for food equipment transport and veggie refrigeration at music festivals)

School buses have factory-installed insulation behind the walls and ceilings (usually fiberglass) which often traps water and can become moldy. The insulation on my bus wasn't moldy, but it did have thousands of stink bug corpses in it.

If you're going to have anything at all to do with food service, you in particular need to fully gut your bus.

Windows you need to take out and clean and then reseal them in order to stop the leaks. If you don't mind lots of water leaking into your bus every time it rains, you can skip this step.
