Size Of Tanks

What's the general consensus on whether the fresh water tank should be bigger than the gray water tank, or vise versa? I have room for 100a. fresh, but will probably go 60. Is a 40ga. gray going to be big enough since all the water from the fresh won't end up in the gray?
 
I salvaged all of mine from a winniebego and they had 35 black 35 grey and a 75 fresh because half the black could be solids and even a grey tank could have solids to take up space.
Have used mine for a week at a time without having to dump or fill any tank and didn't run out of water even with an outside sink hanging on the side of the bus and drained on the ground through a rock filled sediment bucket and an outdoor shower. With curtains of course?

I have 70 fresh and 35 / 35 for holding. 35 lasts a lot longer for black than gray. I’ve overflowed my gray a couple times. Teenagers and showers are a thing...if you keep them short and sweet it will last, but showers fill the gray tank fast.

My setup works well, but if I could just choose I would probably have 100 fresh, 50 gray, 35 black.
