This is horrifying to me. Please help

You'll have to cut the main harness behind the driver window and splice in like 20 12in extensions.

Once everything is where you want it, sure spray foam the harness, it aint going anywhere then.
I’m guessing that would just entail cut, strip, tie together, (do I need to solder?), heat shrink or crimp?

Also we’re doing a roof raise next and I’m afraid the wires won’t reach for that extra 12”. Has anyone encountered that?

I've done more than a dozen roof raises, on everything from Thomas to Blue Bird to International and Gilligs...and I have, only once, had to add extensions into the wiring up front. Most of these were 14-18" roof raises. I've found that in most cases there's enough extra cable, in that big bundle that runs vertically in the channel behind the driver's side window, to cut the zip ties and unfold it. I've found the extra inside the exterior circuit panel or behind the driver's seat.

Now, in the back where those wires drop down to the rear tail and brake lights that's a different matter. I always have to extend those, but that's just 4 or 5 wires.

The only exception would be any of the camera cables. Rip those things out! They are usually white, although they might be black, and they'll usually be coiled into a big spool the size of your hand. Those video cables come long and don't get cut, so the extra is just coiled up and stuffed somewhere. If you find those, you can pull them out without fear.

When the school district that owned my bus was removing their camera equipment from the dash area, they left one of the power cables for the camera dangling around behind the control panel. Fast forward a few months into ownership, and something is tripping my circuit breaker at regular intervals. Turns out that power cable was shorting out on part of the firewall and resetting everything.
I yanked that stupid cable to the front of the control panel and taped it up GOOD. Had me stumped for a while, though.

If you don't mess with it, it won't mess with you. Every time you cut or mess with wiring, you have to check everything to make sure it still works.
