The motorhome crowd has this down to a science. The better tow bars (Blue Ox, Ready Brute Elite, etc.) all make connect/disconnect a very simple, one person job. Takes me about 2-3 minutes.
I went with the Ready Brute Elite tow bar from N.S.A. RV Products and am very happy with it (lots and lots of miles towed). It is described in part 3 of the above posts.
An older Jeep Cherokee (and all Wranglers - I'm not sure about the newer Cherokee's) are excellent choices as they don't require any drive-train modifications. If you get one WITHOUT a steering wheel lock, you simply drop the transfer case into neutral, disengage the emergency brake, and off you go.
